Family Owned with a Historic Location
In 1931, Gaetano (Tom) Vella, began Vella Cheese at the request of some local dairymen. His creamery gained local and tourist attention in the 1960s with a new high-quality cheese he was making: wheels of Dry Jack Cheese. The operation was turned over to Tom’s son, Ignazio, in 1981. And it is still family-run today, by third and fourth generations of the Vella family.
The little creamery on Second Street where Tom Vella made his cheese decades ago is still the location of Vella Cheese today. The cheese factory is too small to offer tours to the public, but you’re welcome to stop in and try samples of the cheeses. We highly recommend doing this to get a better understanding of the family’s commitment to high quality, made-by-hand cheese.
Attention to Detail at Every Turn
When you visit Vella Cheese Company, you will immediately recognize the quality of the product they produce. And, anyone at the shop will tell you that this emphasis on quality starts at the very beginning. The cheesemakers at Vella Cheese only use top-grade milk produced by the finest herds of cattle in California. This fantastic raw material is treated with the greatest of care from the field to the factory, and this is clear in the final product Vella Cheese produces.
Sustainably Produced Cheese
All the milk used to produce Vella Cheese is sustainably farmed by Mertens Dairy, a family-owned dairy in Sonoma, CA. This dairy only produces milk from happy, free-range cows. In addition to using only natural ingredients, the company is praised for making a positive impact on the environment. Since 2003, Vella Cheese Company has sustainably produced its cheese. It is the first solar powered business in Sonoma and is committed to waste diversion in their operations.
The variety of cheeses offered by Vella today means that they have a cheese for every occasion. The Original Jacks and the Dry Jacks that made them famous are joined by a variety of cheddar and Italian-style cheeses.
